Great recipe – I ate these at the aforementioned July 4th party and they were easily the best grilled chicken I’ve ever had.
Protein:
10 lb Chicken, drumsticks (or thighs, wings. Hell, you could even skewer some random veggies and toss them in the marinade)
Marinade
.25 cup Sesame Oil
.5 cup Smart Balance Vegetable Oil, split (.25 cup for marinade, .25 cup for roasted garlic)
4 each Lime juice and zest
2 tsp Pepper, black, freshly ground
1 tbs Paprika, smoked
1 tbs. Chipotle, crushed
6 each Garlic clove, roasted and smashed
1 each Jalapeno, minced (keep those seeds in there too!!!)
1 tbs Cumin, toasted and ground
.25 cup Liquid Aminos or Soy Sauce
Garnishes:
4 each Meyers Lemons, just the zest – save the rest
.25 bn Cilantro, roughly chopped
3 tbs sesame seeds, toasted
